Pancakes are the perfect, easy to make, breakfast recipe for all of the family. Whether they’re sweet or savoury, fluffy or flat, pancakes are sure to put a smile on anyone’s face. Alpro, the plant-based pioneer, and its brand ambassador Yvonne Connolly, have created a delicious Amazin’ Raisin Pancake recipe that give good old-fashioned pancakes a new lease of life.
You will need:
- 255ml Alpro Almond Unsweetened drink
- 115g flour
- 2 eggs
- 30ml cold water
- A handful of raisins
- 1 tbsp of margarine
- To start, sift the flour into a medium sized bowl and make a well in the middle. Mix Alpro Almond Unsweetened drink and water together. Break the eggs into a well in the centre of the flour and start whisking slowly. Add the Almond Unsweetened and water, in a steady stream, whisking constantly until smooth. You’ve now created your pancake mix. Add in the raisins and get ready to flip.
- Take a small frying pan, place it on a high heat and add a table spoon of margarine. After melting the margarine, pour in a small amount of the pancake mixture. Once the mixture takes on its shape, turn regularly until the pancake is golden brown on each side.
- To finish, serve with your favourite plant-based toppings.
