Roz Purcell’s protein pancakes are her breakfast staple. Much like they’re a pre-game snack for Philly McMahon. So why not put the two together and see what they can create from Roz’s recipe?
Give it a go!
Makes 6 pancakes
You will need:
80g oats
3/4 tsp baking powder
1 banana
1 tbsp coconut oil for frying
1 scoop x 50g protein powder of choice
250ml almond milk
1 tsp vanilla
Smooth peanut nut butter (Roz loves Meridian)
Your fav fresh berries
Dark chocolate shavings
Method
- In a blender combine all the ingredients into a smooth batter.
- In a clean non-stick pan add a little bit of coconut oil and add 2 tbsp of the batter.
- Cook for 3 minutes either side until golden around the edges and cooked through.
- Repeat for all of batter and serve with your favourite toppings and then simply enjoy!
