Nicky Halliday
Nicky is a qualified Nutritional Therapist (Irish Institute of Nutrition and Health 2011) and Natural Chef (Bauman College Holistic Nutrition and Culinary Arts 2013). In 2014 she created the fresh food deli and worked as head chef in the Hopsack Health Store for 3.5 years, which led to a nomination for the best “free from” restaurant in the Irish Restaurant Awards. From there she went on an adventure to Costa Rica and worked as head chef at Farm of Life Healing Centre for a year, mainly focusing on raw vegan food.
Nicky then put her nutrition knowledge together with her cookery expertise and wrote a book called “A Practical Guide to Cooking for Health” which has been a help to many kitchens around the world.
Nicky has been working the last 5 years as a freelance chef for healing retreats around Ireland. Her food is artistic and truly wholesome, bursting with fresh vibrant flavours, while supplying the body, mind and soul with delicious nourishment.
Nicky also works as a Nutritional Therapist and a Belief Coding® practitioner with women who have been diagnosed with HPV virus and cervical dysplasia as she managed to heal herself naturally from this. She also facilitates workshops and retreats with Cacao Medicine, Shamanic Trance Dance, Song Circles, Connection and Meditation.
Nicky will be focusing on foraged, plant based recipes that will not only be quite simple to make, but will also really impress any guest that comes to your home. She will talk about what you can forage for yourself at this time of year and how to use these plants in your cooking, for tinctures or teas. She will also talk about how you can make a beautiful heart healing tincture with hawthorn.
