Conor Spacey’s Fluffy Ricotta pancakes with Rhubarb
HAppy pancake day, wellfesters! To mark the occasion, Here is a delicious pancake recipe from one of our wonderful WellFood presenters; Conor Spacey
Did you know that 1 in every 6 litres of milk is wasted in Irish homes weekly? This recipe from chef Conor Spacey is a great way to use surplus milk to make your own ricotta cheese and pancakes, served with delicious early season Irish Rhubarb. Make sure to tag us on Insta if you try them!
For the ricotta:
INGREDIENTS:
1 litre surplus/expired milk
Juice of 1 lemon
80ml of vinegar
Pinch of salt
METHOD:
Slowly heat your milk in a pot until it begins to foam, but not boil.
Remove from the heat and add your lemon juice, vinegar, and salt.
Leave it in the pot for 10 minutes, the curds will separate, then pass through a thin cloth.
Leave it for 30 minutes to strain. Then keep in your fridge for up to a week. Keep the Whey (liquid) for the pancakes
FOR THE Pancakes (4-6 portions)
INGREDIENTS:
150g self-raising flour
1.5 tsp baking powder
40g castor sugar
3 lrg free range eggs separated.
250g homemade ricotta
160ml Whey
60g butter melted and cooled
METHOD:
Put the flour, baking powder, salt and sugar into a bowl and mix.
Make a well in the centre and add egg yolks, ricotta, whey and ½ the butter and whisk into a smooth batter.
In a separate bowl whisk the egg whites into a soft peak and fold into the batter.
Heat a non-stick frying pan , brush with the remaining butter and add 3 dollops of batter, cook until bubbles appear and flip and cook for another minute.
FOR THE RHUBARB
INGREDIENTS:
800g rhubarb
150g sugar
1 tsp vanilla extract
METHOD:
Add all the ingredients into a pot, bring to the boil and then simmer for 15 minutes
