Super Green Pasta Recipe
This recipe by Ciara Kilmartin, AKA @TheHumbleBalance is PACKED with nutrients and tastes like the most indulgent creamy pasta dish you’ve ever had.
Especially brilliant for those of you trying to eat more veggies who may be finding it tough! Feel free to add chicken if you are looking for some extra protein.

INGREDIENTS
250g pasta
The sauce
100g spinach
5 cloves garlic
50g cashew nuts (soak for 20 minutes in hot water)
1/2 juice of lemon
1 tbs olive oil
50g parmesan
100ml pasta water
250g broccoli
Basil
METHOD
1. Cook the pasta in boiling water for the recommended time.
2. In a separate pot, steam or boil the broccoli
3. To a blender, add the spinach, garlic, cashews, lemon juice, parmesan, olive oil, basil and water from pasta. Blend, and then add the broccoli. Blitz together again.
4. Add the sauce to the pasta, stir on a low heat until the sauce is heated. Add salt to season.
